Agriculture on “Acquarello”
When we bought the “Podere Acquarello” and the first 1000 olive trees, we made a decision: our products must be produced ecologically and sustainably – there is no way around it. Especially with our high-quality olive oil, we rely on harvesting by hand, avoiding pesticides and herbicides and using gentle, organic fertilization with natural urea from sheep, horses and chickens.
Biodiversity and the balance in our meadows play a special role in our agriculture. With an eye for the little things in life, we try to understand the complex interaction of the various weeds in our crops and use them for our cultivation. In our constantly growing wine-growing sector, we also attach great importance to managing our vineyards in harmony with nature.
But what does organic viticulture mean?
The biologically sustainable cultivation of the vineyard includes a holistic cultivation system that is reflected in all work, from pruning the vines to tilling the soil and planting the rows of greenery.
The basic requirement for our characterful wines is active soil that provides our vines with a nutrient-rich and stable substrate. To achieve this, we do not use artificial fertilizers and inorganic preparations, nor pesticides and herbicides, in order to preserve biodiversity above and below ground.
We do not see our philosophy of ecologically sustainable agriculture as a product of the current organic movement, but as a service to future generations, to whom we want to leave the opportunity to manage an uncontaminated nature.
